MALLOCK, M M [Mary Margaret (1847-1938)]

The Economics of Modern Cookery: or a younger son's cookery book.

London : Macmillan & Co, 1927. Second Edition, 7th Impression.  First published 1896.  Printed by Richard Clay & Sons, Bungay.

Octavo (175x115mm) green smooth linen grain, black lettered boards, [2],viii,378pp.  Twenty-nine in text engravings, several charts and tables.

Lacks dust jacket (if issued) and rear free-endpaper.  Owner name to front free-endpaper.

Originally published as 'A Younger Son's Cookery Book', it was written expressly for

"[those] persons belonging to the upper ranks of society, who have been habituated during their early lives to the best cooking which time and money can procure; but who, when they come to settle in homes of their own, find themselves forced to live on incomes diminutive compared to those of their parents or elder brothers, and to content themselves with, it may be, three or four servants, instead of ten or a dozen."

And perhaps more expressly written for their cooks.  Detailed clear explanations of commonsense cooking techniques are provided within the framework of a selection of core recipes, to more clearly explain the fundamentals of cookery.

Although this edition was issued with an amended title with the American market in mind, one can imagine Bertie Wooster's good man Jeeves agreeing with much of the sound practical advice given here, when cooking in his small apartment kitchen.

Miss Mallock was the sister of the English novelist and economics writer William Hurrell Mallock.

A good reference copy.
