Avec leur description, les moyens de reconnaître les bonnes et les mauvaises espèces et de nombreuses recettes culinaires. Ouvrage spécialement rédigé pour servir de complément a la nouvelle flore des champignons de Costantin et Dufour.

Octavo (235x160mm) quarter bound burgundy morocco, five raised bands, six plain compartments, brown marbled boards and endpapers, [4],79,[1]pp, 80 chromolithographic colour plates, illustrating 191 mushrooms printed to recto only. In French.
Joints rubbed and cracking, hinges fine; edges lightly worn, boards lightly scuffed; ex-libris, stamped in several places "Conservatoire des Arts & Metieres Cours d'Agriculture No 774"; pages lightly age-toned, top edges trifle soiled, small stain to top-edge of first quire; plates edges faintly soiled not affecting the illustrations; book plate to front paste down: "Ex libris Jacques Helene Bon"
Dufour opens with a discussion of the taxonomy of mushrooms and advocates taking a simpler approach. He then provides some general principles for cooking with edible mushrooms including some basic recipe ideas for meals and for preserving; there are about 30 recipes. Remedies for mushroom poisoning follow, before a detailed examination of the 191 mushrooms plate by plate. Further recipes and culinary instructions are provided for specific mushrooms including truffles.
Dufour was a French botanist and mycologist. After a long career in the field of scientific education he was recognised for his work in mycology as honorary lecturer at the Faculty of Science in Paris. He was named Chevalier de la Légion d'honneur in 1935.
The artist and engraver for the elegant plates are not disclosed.
